Pickled Eggs

We've had a bit of a glut of eggs and with the wet weather a few weeks ago (couple by a lack of nest boxes) the eggs have been a little dirty so I couldn't really sell them. We've been giving them away to friends and family (which has made me popular for brief spells) but we still had quite a few left to do something with.

 Pickled eggs was the obvious choice.
So Sunday night I set about boiling them all up (once I'd cleaned the shells and tested that none float) and pickling them in clear vinegar. I had a few large necked jars spare from making chutney and other things involving pickle in the past so I used these, although I've still got to remove the labels.
Eggs pickled. Now what?
Two dozen eggs pickled. The only trouble is I'm not sure I like them. It's been years since I've tried one and I do like vinegar a lot more than I used to (I now eat salt and vinegar crisp which I used to hate) so I'll have to try one in a couple of weeks time. Maybe with a packet of crisps.
If I don't like them I'm sure I won't be short of people to give them to.

  1. Good idea. We also have a glut of eggs, so might try pickling some, but first I shall wait to see what your verdict is!

    1. Yeah I wasn't sure if it would be worth it (mind you dad loves them so he can always have them if they're too strong for me).

    2. I make pickled eggs too - the niece just gave me 10 dozen!!! But my family has always used a pickled beet syrup with sugar & pickling spices. Or we use the Dill pickle juice with garlic in it.

  2. I quite like the occasional pickled egg with my lunchtime sarnie. This is the recipe I now use which has a milder "vinegary" taste which I prefer to the usual ones:

    1. Cheers for the link, I just used a premixed vinegar for this batch but I might experiment if I like this lot

  3. I love pickled eggs

    I add a little sugar to the hot vinegar and some celery seeds too for flavour

    Great way of recycling the vinegar bottles unfortunately my hens are on a go slow so no pickled eggs for a while for me :(

    1. It was good to use up the gult of eggs and start again. I'nm going to have to get better at selling them!
