Banana & Chocolate Fairy Cakes

Each week we buy a lot of bananas and normally the kids fire through them like they're the last ones on earth.

But sometimes they get pushed to the back of the bowl and forgotten or I buy too many (the children are as unpredictable as me!)

So when that happens we turn to baking!

Rather than making banana bread, lately we've been making these fairy cakes. No idea where my wife got the recipe from bu they're so good I thought I had to share.

To make about 24 small fairy cakes you'll need:

3 ripe bananas
125ml of vegetable oil
2 eggs
100g of soft brown sugar
225g of self raising flour
3 tbsps of Cocoa powder
Chocolate chips (extra but better with in my mind!)

Oven on at 200 degrees C.

Mash the bananas (or get a very young assistant to do it for you), then add the oil, eggs and sugar and mix them all up. Mix the flour and the cocoa powder together then add in and stir so it's all combined.

It should make a nice wet mixture which you can spoon out into fair cake cases or alternatively  just into a large cake tin.

Pop in the oven for 15 to 20 minutes until they're done.

These taste better the first day you make them, still slightly warm but doesn't every cake, but will keep for a few days just fine. They're such a lovely moist cake that I struggle to stop once I start eating them and before I know it I'm left with a plate full of empty wrappers and a slight feeling of guilt - not much though as they're relatively low in sugar...

If you try them let me know how you get on!

    1. Interesting! Let know how you get on! Never used yoghurt instead of egg before, I guess they won't rise quite as much?

    2. hi there! it's taken a while but i finally tried your recipe.. delicious!! i did it as a loaf cake and used a small tub of yoghurt (125g?) instead of the eggs. Result was really moist and it rose fine. Can't remember how i got the yoghurt idea but it's a great way of using up yoghurts that are beyond their useby date. try it?!gillian

  2. Oh yes! Going to try those tomorrow. Our little grain bin house heats up nicely when I bake, and those look grand.
