Almost Daily Harvest Of Courgettes (Zucchini)

Courgettes seem to attract hate for what a prolific vegetable they are. They are one of the reliable crops where a few plants will keep you in fruits for months so long as you keep picking them. 
 

 We have just a few plants this year and they are producing so much for us. I'm picking this handful of small fruits pretty much every other day at the moment. The trick, of course, is not to turn your back for too long, otherwise they'll be the size of your arm before you know it. 

We love them in a variety of ways, but often sliced thinly in a simple salad, or fried with garlic. Ones I occasionally miss get stuffed or thrown to the chickens as a welcome snack. 

What's your favourite use for this great veggie? Or do you dread the glut?

  1. I used to struggle to keep up with them but last year I was given a recipe for Courgette and Potato soup. It sounds very boring but it is absolutely delicious, especially with a sprinkling of cheese on top. I've actually grown an extra plant this year so that I can get a good stash in the freezer for the cold winter days!

    1. I put this on twitter and so many peopel have said about courgette soup I think I'll have to give it a try. Do you have a recipe? Is it one to eat cold or hot? I can't have cows cheese or dairy unfortunately but sure I could make it work

  2. Grated into breads, cakes and muffins. https://www.recipetineats.com/cheesy-zucchini-bread-no-yeast/ Or grated and made into fritters with some corn. We even bulk out our bean bhajis with grated zucs. I grate, salt, squeeze and freeze surplus so as to have plenty for these purposes during the winter. They also make a great creamy soup. Greek tavernas almost all serve kolokithakia - which is sliced thinly, floured (possibly with gram flour) and deep fried to crisp on the outside. This is our favorite but really difficult to do at home.

    1. They all sound like some great ideas. I like the idea of coating them before frying. I think that would work well for me!

  3. Kev, are those what we would call Zucchini here in the States? If so, they are famous for their productivity as well as those that growing them doing everything in their power to give them away as well as put them into everything.

    Zucchini bread is wonderful and always happily indulged in here.
